    What I Eat In a Day at Work | EASY & Healthy Meals


    Watch my What I Eat in a Day at Work video below. I got a lot of requests for easy meals and since the cold weather is slowly approaching (in Canada) I thought it would be a good fit. On my most days I tend to bring last nights dinner leftovers but when there aren't any I will make myself a massive salad or a typical sandwich to keep   me from not feeling famished until dinner time.



    Breakfast Smoothie

    Around 6:30 AM, I pull out my Nutribullet and get my ingredients ready to make a massive green smoothie. As you can see, I grab everything from the fridge and pop it on the counter and start adding it to the blender. Today, I added some spinach, cilantro, celery, avocado, banana, flaxseed, matcha powder, coconut water and a couple of days for some sweetness as I do have lots of green in this smoothie.

    Of course, you can use a blender but I am obsessed with my NutriBullet because it's quick, fast and powerful, very optimal for smoothies. I press blend and walk-way and my smoothie is super smooth and perfect overtime. Then, I also pour my smoothie into a container that seals properly and doesn't leak. The NutriBullet comes with two on the go containers that are portable, fits into my lunch bag and cleans very quickly. I can take it with me on the train and it never spills. Here is my smoothie recipe that kickstarts my day.

    1 1/2 cups of spinach
    1/2 cup of celery
    1/4 cup of cilantro
    1 frozen banana
    Handful of blueberries
    1 teaspoon of flax seed
    1 teaspoon of matcha powder
    1 cup of coconut water
    A couple of dates 



    Lunch Recipe: Brown Rice with Mixed Vegetables

    And then before you know it, it's lunch time. So for today, I had a green spinach salad with brown rice prepared in a traditional somali way. So I added lots of spices including cinnamon sticks, cloves, cumin seeds and cardamom. The For the full recipe on somali style brown rice, read below! This recipe serves 4-5 people and the total cook time is 30 minutes.

    Ingredients:

    2 cups of basmati rice or any long grained rice
    2 tomatoes diced (optional)
    1 large chopped onion
    I cinnamon stick
    5 cloves
    4 cardamom pods
    1 teaspoon of cumin seeds
    3 cloves of garlic or 1 teaspoon of minced garlic
    4 tablespoons of olive oil 
    1 cup of chopped mixed vegetables such as carrot, peas and corn
    2 ½ cups of water
    Salt to taste
    3 medium sized carrots, sliced

    Instructions:

    1. Wash the rice and soak in water
    2. Fry the onion until it caramelises
    3. Grind the dry spices and add with garlic, cook for a minute allowing the heat of the oil to release the aroma of the spices
    4. Add the diced tomatoes, cook until it thickens
    5. Add the vegetables and cook until half done
    6. Drain the rice and add the water. Cover with the pan with aluminium foil. Ensure the pan is well sealed.
    7. Simmer for about 15 minutes or until all the liquid has been absorbed.

    8. Place the brown rice and vegetables on a large serving plate or platter and squeeze over lime juice, season with black pepper and then sprinkle with toasted pumpkin seeds, cilantro and sliced carrots.


    Dinner Recipe: Roasted Sweet Potato and Carrots


    So, let's move on to dinner, my favourite part of the day. I love coming home after a long day, get into my comfortable loungewear and whip up a feast for dinner. This evening, I came home craving something sweet and my favourite trick for banishing sugar cravings is making roasted sweet potatoes and carrots. It is my easy, go to recipe when I can't shake a sugar craving.

    Ingredients:

    1/2 chopped large sweet potato
    3 medium chopped carrots
    2 tablespoons of olive oil
    2 cinnamon sticks
    1 teaspoon of ground cumin
    1/2 chopped onion
    1/4 teaspoon of salt

    Instructions:

    1. Preheat oven to 400 degrees
    2. Toss carrots and sweet potatoes with chopped onion, olive oil and   spices on a sheet pan.
    3.  Roast for 15-20 minutes or until veggies are tender.
    4. Add salt to taste, garnish with fresh herbs and serve warm.
